We have decided to hold back a small portion of the wild cherry liqueur for aging in wood. We hope this will develop a further complexity, adding vanilla and spice to create a more warming product. This is a step into the dark for us, but are excited to share with you what we create.
Having the choice between the traditional oak or a more unusual wood, it seemed more exciting to push the boundaries and choose cherry wood – creating a ‘double cherry liqueur‘. This should lead to softer tannins that better complement the delicate fruit flavours of the original product.
